Missione compiuta, come dimostrano le foto, sia nel gusto che nell&#8217;aspetto.<\/p>\n<p>Come suggerisce il nome, l&#8217;ingrediente principale di questo piatto \u00e8 il vitello, cio\u00e8 il piccolo di mucca. Il vitello tonnato vegano \u00e8 costituito da fettine di carne tenerissima cotte e riposate con condimenti e aromi particolari, servite con una crema aromatizzata al tonno o al sapore di mare.<\/p>\n<p>In questa versione vegana utilizzeremo il nostro migliore alleato per sostituire le proteine, s\u00ec, avete indovinato, il <a href=\"https:\/\/amzn.to\/3KTfceI\" target=\"_blank\" rel=\"noopener\">glutine di frumento<\/a>. Proteine estratte dal grano e dai cereali affini (farro, spelta, spelta, grano candito, grano kamut, segale e orzo) che formano un impasto che, una volta cotto, forma una rete e una consistenza molto simile a quella del muscolo o della carne. Per questo si chiama giustamente Grain Muscle, un marchio italiano che ha fatto centro con la definizione di questa proteina.<\/p>\n<p>Per la salsa tonnata, a causa della sua somiglianza, una crema di ceci simile all&#8217;hummus, una preparazione che, se si utilizzano gli ingredienti giusti, pu\u00f2 lasciare chiunque nel dubbio se ci\u00f2 che si sta mangiando contenga effettivamente tonno o meno.<\/p>\n<p>Ripensandoci, in Ecuador c&#8217;era un piatto della mia infanzia che sicuramente si basava su questa preparazione e che mi ha spinto a prepararlo: il quasi dimenticato salon fr\u00edo, ovvero fette rotonde di carne tenera marinate a freddo con olive verdi, chiodi di garofano e cipolle sottaceto.<\/p>\n<p>Solo che non \u00e8 stato servito con la salsa, ma ho deciso che la versione completa mi piace cos\u00ec tanto che l&#8217;ho gi\u00e0 ripetuta due volte e non come antipasto ma come piatto principale con un contorno caldo. \u00c8 utile.<\/p>\n<p>Con questo voglio dire che il vitello tonnato \u00e8 un piatto vegano molto versatile, soprattutto per la stagione pi\u00f9 calda, o da servire come antipasto e stuzzichino per una raffinata cena vegana. Perch\u00e9 no? Per il vitello vegano avrete bisogno di:<\/p>\n<ul>\n<li><strong><a href=\"https:\/\/amzn.to\/3KTfceI\" target=\"_blank\" rel=\"noopener\">Glutine di grano:<\/a> <\/strong>Ingrediente base della carne vegetale, questa proteina elastica \u00e8 in grado di compattarsi e ha una consistenza che varia a seconda della quantit\u00e0 di acqua contenuta, rendendola incredibilmente versatile per simulare vari tagli o tipi di carne. L&#8217;unico vero svantaggio \u00e8 che non ha un sostituto senza glutine, perch\u00e9 \u00e8 letteralmente glutine. Quindi questa ricetta purtroppo non \u00e8 adatta ai celiaci. \u00c8 possibile creare carni vegane senza glutine? s\u00ec, con le proteine della soia e del pisello, ma richiede altri additivi pi\u00f9 difficili da ottenere.<\/li>\n<li><strong>Tofu extra sodo:<\/strong> in questa ricetta il tofu sodo serve ad esaltare e a dare maggiore struttura al glutine, che senza di esso \u00e8 estremamente elastico e morbido, il che non \u00e8 realistico nella consistenza della carne, poich\u00e9 nessuna carne ha una consistenza cos\u00ec spugnosa.<\/li>\n<li><strong>Okara o crusca di latte di soia (o tofu pi\u00f9 solido)<\/strong>: In questa preparazione svolge la stessa funzione del tofu, ma fornisce anche consistenza. \u00c8 possibile utilizzare altre fibre vegetali, ma per sicurezza \u00e8 meglio usare pi\u00f9 tofu.<\/li>\n<li><strong><a href=\"https:\/\/www.hsnstore.com\/hsnaffiliate\/click\/?linkid=cHJvZHVjdHx8SFNORS1QMnx8SEFaTE9WRUdBTnx8aHR0cHM6Ly93d3cuaHNuc3RvcmUuY29tL21hcmNhcy9lc3NlbnRpYWwtc2VyaWVzL3Byb3RlaW5hLWRlLWd1aXNhbnRlLWFpc2xhZGEtMi0w\" target=\"_blank\" rel=\"noopener\">Proteine del pisello:<\/a> <\/strong>Serve ad aumentare il contenuto proteico del vitello tonnato vegano. Il seitan \u00e8 gi\u00e0 una delle fonti proteiche pi\u00f9 elevate tra gli alimenti di origine vegetale, ma non \u00e8 una proteina completa, quindi mescolarlo con tofu e proteine di pisello \u00e8 il modo migliore per perfezionarlo. Quando qualcuno vi dice che le proteine vegetali non sono complete, avete la vostra risposta. Basta mescolare e abbinare \ud83d\ude09<\/li>\n<li><strong>Amido di mais: <\/strong>l&#8217;amido aiuter\u00e0 a legare e a fissare la consistenza del vitello vegano. Anche per schiarire leggermente il colore giallastro del seitan.<\/li>\n<li><strong>Condimento:<\/strong> Fondamentalmente aglio e cipolla in polvere, non vogliamo aggiungere molto altro sapore perch\u00e9 lo aggiungeremo in seguito.<\/li>\n<li><strong>Olio d&#8217;oliva: <\/strong>per dare un po&#8217; del contenuto di grassi che la carne contiene naturalmente, ma in questo caso ne aggiungeremo uno insaturo, privo di colesterolo, che dar\u00e0 un sapore molto particolare alla carne vegetale.<\/li>\n<li><strong>Carbone attivo e polvere di barbabietola:<\/strong> sono i miei migliori alleati per il colore, il primo d\u00e0 un tono grigiastro e il secondo un tono rosato.<\/li>\n<\/ul>\n<p>Per l&#8217;acqua di cottura:<\/p>\n<ul>\n<li>foglie di alloro<\/li>\n<li>chiodo di garofano<\/li>\n<li>grani di pepe<\/li>\n<li>Marmite o vegemite (estratto di lievito) Facoltativo<\/li>\n<\/ul>\n<p>Per la salsa tonnata sono necessari<\/p>\n<ul>\n<li><strong>Ceci cotti: in<\/strong> scatola o cucinati in casa<\/li>\n<li><a href=\"https:\/\/amzn.to\/3mMKufi\" target=\"_blank\" rel=\"noopener\"><br \/>\n<strong>Salsa Tahini:<\/strong><br \/>\n<\/a> \u00c8 una pasta di semi di sesamo al 100%, che conferisce all&#8217;hummus la sua cremosit\u00e0 e il suo sapore.<\/li>\n<li>Succo di limone o lime<\/li>\n<li>Tonno vegano o Vuna: se lo trovate, ma tahini e succo di lime sono la combinazione perfetta.<\/li>\n<li>Asparagi in scatola: non so se qualcun altro ha notato questa magica coincidenza, ma gli asparagi in scatola hanno un sapore incredibilmente simile al tonno.<\/li>\n<li>Senape: \u00e8 la salsa pi\u00f9 normale, ma bisogna fare attenzione al fatto che molte contengono miele, il che le rende non vegane.<\/li>\n<li>Olio d&#8217;oliva<\/li>\n<li>Aglio<\/li>\n<li>Olive verdi o capperi a piacere e prezzemolo fresco per servire<\/li>\n<\/ul>\n<h2>Consigli per la preparazione del vitello tonnato vegano<\/h2>\n<p>Per ottenere il meglio da questa ricetta ci sono alcune raccomandazioni che potete seguire o meno a seconda del tempo che avete a disposizione:<\/p>\n<ul>\n<li>Far riposare il seitan per una notte dopo la cottura: Il glutine di grano acquisisce la sua consistenza migliore dopo un lungo riposo, quindi consiglio di lasciarlo macerare in frigorifero per tutta la notte, ma si pu\u00f2 anche macerare per qualche ora.<\/li>\n<li>Utilizzare un robot da cucina per preparare la carne vegetale. In questo modo si ottiene un impasto pi\u00f9 elastico, poich\u00e9 la macchina lavora la rete glutinica in modo pi\u00f9 intenso con il movimento delle lame. Se lo fate a mano, cercate di impastare a lungo e di riposare per qualche minuto mentre impastate, in modo che il glutine si sviluppi meglio e si ottenga un effetto simile.<\/li>\n<li>Utilizzate un tagliapasta rotondo per dare forma alle fette o, se preferite, formate un cilindro con tutto l&#8217;impasto, cuocetelo intero e poi tagliatelo a fette. Ma la cottura profonda pu\u00f2 richiedere fino a 1,5 ore, pi\u00f9 il riposo, perch\u00e9 diventi abbastanza sodo da poterlo affettare in seguito; per questo motivo preferisco cucinarlo a fette sottili.<\/li>\n<\/ul>\n<h2>Perch\u00e9 preparare il vitello tonnato vegano?<\/h2>\n<p>Questa ricetta non \u00e8 solo deliziosa, ma \u00e8 anche un&#8217;idea originale da incorporare nella vostra dieta quando siete a corto di idee:<\/p>\n<ul>\n<li>Questo vitello tonnato vegano \u00e8 una ricetta leggera, ricca di proteine e povera di grassi e carboidrati. Il seitan, insieme alla soia e ai piselli, \u00e8 una fonte completa di proteine per la vostra dieta a base vegetale.<\/li>\n<li>Come tutte le ricette vegane, \u00e8 naturalmente privo di colesterolo.<\/li>\n<li>Non contiene latticini, uova o pesce, quindi \u00e8 100% cruelty-free. Non vi mancher\u00e0 nulla rispetto alla versione tradizionale.<\/li>\n<li>Il vitello tonnato vegano \u00e8 una ricetta sostanziosa che si conserva facilmente per diversi giorni per la preparazione
