Il suo nome si riferisce alle canne utilizzate in passato per tirare la pasta, che oggi sono pi\u00f9 comunemente in metallo.<\/p>\n<p>Ci sono varie teorie sul fatto che la sua origine sia romana o sarda con interventi arabi, ma si parla di questo dolce gi\u00e0 in scritti molto antichi che parlano di tubi arricciati ripieni di una bianca prelibatezza.<\/p>\n<p>La verit\u00e0 \u00e8 che attualmente \u00e8 uno dei dolci pi\u00f9 rappresentativi d&#8217;Italia, in una lista davvero lunga che comprende anche il tiramis\u00f9, il pannetone, il pandoro, il torrone e l&#8217;immancabile gelato.<\/p>\n<p>Per quanto riguarda gli ingredienti, la pasta \u00e8 di solito leggermente al cacao, alla cannella e aromatizzata con vino marsala e il ripieno \u00e8 tradizionalmente di ricotta di pecora, leggermente zuccherata e aromatizzata con scorza di agrumi, cannella, mescolata a scaglie di cioccolato.<\/p>\n<p>Guarnire con agrumi canditi, ciliegie, pistacchi o altre gocce di cioccolato. Una variante messinese utilizza la panna scura, mescolata al cacao.<\/p>\n<p>I cannoli vegani siciliani sono un adattamento senza ingredienti di origine animale, quindi senza colesterolo, lattosio e uova. Deve essere utilizzato a freddo, in modo da formare piccoli strati di grasso incapsulato che daranno all&#8217;impasto le sue caratteristiche bolle.<\/li>\n<li><strong>Cacao amaro in polvere: <\/strong>viene utilizzato in piccola quantit\u00e0 e il suo scopo \u00e8 principalmente quello di colorare l&#8217;impasto.<\/li>\n<li><strong>Zucchero bianco vegano: <\/strong>normale zucchero semolato, pu\u00f2 essere sostituito da altri zuccheri, dolcificanti in polvere o gocce.<\/li>\n<li><strong>Cannella in polvere: <\/strong>conferisce un sapore piccante ai cannoli.<\/li>\n<li><strong>aceto bianco: <\/strong>questo ingrediente aiuta la consistenza e la morbidezza dell&#8217;impasto durante la lavorazione, dopo la cottura evaporer\u00e0 e diventer\u00e0 impercettibile.<\/li>\n<li><strong>Vino marsala o vino rosso mescolato con grappa, brandy o altro distillato: <\/strong>la ricetta originale prevede l&#8217;uso di vino marsala, di cui non so se sia vegano o se esistano opzioni vegane adatte. In sostituzione ho utilizzato un vino bianco adatto, con una parte di grappa e melassa per il colore.<\/li>\n<li><strong>Olio vegetale per friggere:<\/strong> \u00e8 sempre meglio un olio pi\u00f9 resistente alla temperatura, come l&#8217;olio di arachidi raffinato o miscele speciali per friggere.<\/li>\n<\/ul>\n<p>Non volevo complicare le cose perch\u00e9 non compriamo distillati e non intendiamo farlo. Ci sono sempre alternative da sostituire. Io preferisco sempre la prima, in quanto si ottengono tutti i benefici dei probiotici che producono naturalmente acido lattico e tagliano la crema di mandorle o anacardi.<\/p>\n<p>Il problema \u00e8 che richiede una yogurtiera o un luogo a temperatura costante e calda per alcune ore. Se non si dispone di questa opzione, si pu\u00f2 riscaldare la crema di mandorle a 80\u00b0C e aggiungere un ingrediente acido come il succo di limone o l&#8217;aceto di sidro di mele o bianco e lasciare riposare per un po&#8217; fino a quando il composto non appare tagliato.<\/p>\n<p>A questo punto versare su un panno di cotone sottile e lasciare che il liquido fuoriesca naturalmente senza premere. Dal composto uscir\u00e0 un latte di mandorla acquoso che potrete utilizzare per ricette, biscotti o torte. Non \u00e8 necessario eliminare tutto il liquido, ma solo quanto basta per rendere la ricotta pi\u00f9 densa e omogenea.<\/p>\n<h2>Consigli su come ottenere un perfetto cannolo siciliano vegano<\/h2>\n<p>Il segreto per ottenere un aspetto autentico e caratteristico per i vostri cannoli siciliani vegani sta nelle pieghe che fate nella pasta mentre la stendete. Pensate a una sorta di pasta sfoglia in scala ridotta che deve essere piegata per formare i caratteristici fiocchi che la rendono croccante.<\/p>\n<p>Quando si stende la pasta con la macchina per la pasta o a mano, ripiegare le estremit\u00e0 verso il centro e stendere. Piegare a met\u00e0 nel senso della lunghezza e ripetere pi\u00f9 volte, idealmente 10 volte prima di allungare fino allo spessore desiderato. Sembra che i cannoli siano fatti con sfoglie spesse, invece funzionano perfettamente anche con la forma pi\u00f9 sottile di cannolo con uno spessore di 0,5 millimetri.<\/p>\n<p>Anche la temperatura dell&#8217;olio gioca un ruolo importante nella consistenza e nel colore dei cannoli. L&#8217;olio deve essere a 180\u00ba Celsius. In questo modo le provette saranno pronte in circa un minuto. \u00c8 possibile friggere pi\u00f9 di una volta, se lo spazio e le capacit\u00e0 lo consentono.<\/p>\n<p>Se volete conservare i cannoli ripieni per diversi giorni, una buona idea \u00e8 quella di spennellarli con del cioccolato fuso all&#8217;interno, in modo che i gusci siano impermeabili e non permettano al ripieno di ammorbidire la pasta.
