Il latte di soia \u00e8 il latte che dal punto di vista nutrizionale assomiglia di pi\u00f9 al latte vaccino, senza tutti i danni che comporta la sua produzione. Alcune persone sono allergiche alla soia, mentre altre la evitano perch\u00e9 ritengono che faccia male alla salute. Nel nostro caso, lo consumiamo regolarmente e siamo perfettamente in salute.<\/p>\n<p>&nbsp;<\/p>\n<p>\u00c8 una buona idea cercare preferibilmente una soia non OGM e biologica, ma se non avete accesso a questo tipo di soia e non vi interessa molto, utilizzate qualsiasi soia abbiate a disposizione. Dopo tutto, la loro produzione non danneggia gli animali.<\/p>\n<h3>Probiotici<\/h3>\n<p>L&#8217;altro ingrediente fondamentale di questa ricetta sono i <a href=\"https:\/\/www.amazon.es\/gp\/product\/B01LYAR7LJ\/ref=as_li_tl?ie=UTF8&amp;camp=3638&amp;creative=24630&amp;creativeASIN=B01LYAR7LJ&amp;linkCode=as2&amp;tag=hazlovegan01-21&amp;linkId=9a3e06ea76d1c9cb27ec81e1a841ae80\" target=\"_blank\" rel=\"noopener\">probiotici<\/a>, senza i quali non si potrebbe mangiare lo yogurt. N\u00e9 l&#8217;acqua di macerazione dei legumi n\u00e9 il rejuvelac (acqua di macerazione dei chicchi di grano) garantiscono l&#8217;assunzione di probiotici vivi e corretti.<\/p>\n<p>&nbsp;<\/p>\n<p>I probiotici utilizzati per la produzione di yogurt vegani sono quelli che non si nutrono di lattosio, ma anche di altri zuccheri convertendoli in acido lattico. Si tratta di Lactobacillus thermophilus, acidophilus, bifidus e bulgaricus. Se riuscite a procurarvi probiotici in capsule contenenti uno o pi\u00f9 di questi lattobacilli, potete usarli per preparare lo yogurt. Assicuratevi solo che la sua formulazione non contenga lattosio di alcun tipo o, preferibilmente, che dichiari di essere vegana.<\/p>\n<p>&nbsp;<\/p>\n<p>Non lasciatevi spaventare dal prefisso Lacto &#8211; non significa che contengono latte o latticini, \u00e8 semplicemente il nome dell&#8217;acido prodotto da questi batteri, l&#8217;acido lattico, che \u00e8 vegano e si produce naturalmente con la fermentazione, ed \u00e8 quello che d\u00e0 al formaggio e allo yogurt quel sapore aspro.<\/p>\n<p>&nbsp;<\/p>\n<p>Questi sono i <a href=\"https:\/\/www.amazon.es\/gp\/product\/B01LYAR7LJ\/ref=as_li_tl?ie=UTF8&amp;camp=3638&amp;creative=24630&amp;creativeASIN=B01LYAR7LJ&amp;linkCode=as2&amp;tag=hazlovegan01-21&amp;linkId=9a3e06ea76d1c9cb27ec81e1a841ae80\" target=\"_blank\" rel=\"noopener\">fermenti ideali<\/a> per la preparazione dello yogurt vegano, ma \u00e8 possibile utilizzare anche i <a href=\"https:\/\/www.amazon.es\/gp\/product\/B0001VVBQU\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=hazlovegan01-21&amp;creative=24630&amp;linkCode=as2&amp;creativeASIN=B0001VVBQU&amp;linkId=36780a90b30fc2185ba785f6a80da7bb\" target=\"_blank\" rel=\"noopener\">fermenti per yogurt vegano<\/a> in capsule. Controllate gli ingredienti e assicuratevi che la composizione contenga Lactobacillus Acidophilus, bifidus o thermophilus.<\/p>\n<h3>Amido di mais<\/h3>\n<p>Questo ingrediente sar\u00e0 un additivo per dare una consistenza cremosa e una densit\u00e0 al nostro yogurt. Prima usavo un panno di cotone o una garza, ma lavarli dopo l&#8217;uso era un incubo, ci voleva molto tempo per asciugarli ed erano maleodoranti. Ma una yogurtiera, se lo yogurt viene consumato regolarmente a casa, vi render\u00e0 la vita molto pi\u00f9 facile. Esistono pentole multifunzione come l&#8217;<a href=\"https:\/\/www.amazon.es\/gp\/product\/B00OP26T4K\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=hazlovegan01-21&amp;creative=24630&amp;linkCode=as2&amp;creativeASIN=B00OP26T4K&amp;linkId=3f122daa6b61a365d177653f3bf429e0\" target=\"_blank\" rel=\"noopener\">Instant pot<\/a>, robot da cucina come <a href=\"https:\/\/www.amazon.es\/gp\/product\/B015993ZGW\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=hazlovegan01-21&amp;creative=24630&amp;linkCode=as2&amp;creativeASIN=B015993ZGW&amp;linkId=11270b27a2e2ce4c170e50683e78e3be\" target=\"_blank\" rel=\"noopener\">questo modello <\/a>o anche alcune <a href=\"https:\/\/www.amazon.es\/gp\/product\/B071RD67SB\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=hazlovegan01-21&amp;creative=24630&amp;linkCode=as2&amp;creativeASIN=B071RD67SB&amp;linkId=9dda5c5ff3bf5650e64858e7f8a65149\" target=\"_blank\" rel=\"noopener\">friggitrici ad aria<\/a> che permettono di impostare la temperatura tra i 30\u00ba e i 45\u00ba Celsius, la temperatura necessaria ai ceppi di yogurt per fermentare.<\/p>\n<p>&nbsp;<\/p>\n<p>Anche lasciare il barattolo nel forno con la luce accesa e avvolto in asciugamani funziona, ma non \u00e8 un metodo altrettanto affidabile, perch\u00e9 la temperatura non sar\u00e0 costante e probabilmente dovrete aumentare il tempo di fermentazione.<\/p>\n<p>&nbsp;<\/p>\n<p>Bisogna anche tenere presente che se la temperatura supera i 45 o 50 gradi Celsius durante la fermentazione, i batteri che fermentano lo yogurt muoiono e perdono ogni effetto. Un tempo avevo una <a href=\"https:\/\/www.amazon.es\/gp\/product\/B00MNBQ742\/ref=as_li_qf_asin_il_tl?ie=UTF8&amp;tag=hazlovegan01-21&amp;creative=24630&amp;linkCode=as2&amp;creativeASIN=B00MNBQ742&amp;linkId=8b57615008423d87a47d454615b649a1\" target=\"_blank\" rel=\"noopener\">macchina per il latte vegetale<\/a>, venduta anche come macchina zuppiera, in cui inserivo semplicemente la soia ammollata e la macchina faceva bollire il composto, lo frullava e non restava che filtrarlo.<\/p>\n<p>&nbsp;<\/p>\n<p>Se avete una di queste macchine, avete gi\u00e0 fatto gran parte del lavoro.<\/p>\n<p>Naturalmente si pu\u00f2 usare anche il latte di soia comprato, ma per me la logica \u00e8 che se si compra gi\u00e0 il latte, tanto vale comprare lo yogurt gi\u00e0 pronto e non farti problemi. Il trucco di questa ricetta sta nel rompere le righe e nel saperla preparare a partire dai fagioli di soia, pi\u00f9 facili da ottenere e pi\u00f9 economici, perch\u00e9 da un chilo di fagioli di soia, che si possono ottenere per 3 o 5 euro, si possono ricavare circa 10 litri di yogurt. Ebbene, 250 g di yogurt vegano sono disponibili a 1 o 1,5 euro, quindi potete fare i conti.<\/p>\n<ol>\n<li><strong>Mettete a bagno i fagioli di soia per almeno 8 ore: la <\/strong>soia gialla si presenta sotto forma di piccoli fagioli dorati, che una volta reidratati diventano molto pi\u00f9 grandi. Trascorso questo tempo \u00e8 importante gettare l&#8217;acqua di ammollo e sostituirla con acqua calda, lasciandola per almeno 15 minuti o finch\u00e9 non si riesce a infilare la mano senza scottarsi, in modo che le bucce si allentino e si possano sbucciare facilmente strofinandole tra le mani.<\/li>\n<li><strong>Sbucciare i fagioli di soia: <\/strong>non \u00e8 obbligatorio sbucciare i fagioli di soia, ma lo consiglio vivamente per evitare i problemi intestinali che alcune persone hanno conla buccia dei legumi. Inoltre, ne migliora notevolmente il sapore. Basta sfregare vigorosamente i chicchi tra le mani e le bucce galleggeranno sulla superficie dell&#8217;acqua di ammollo. \u00c8 possibile rimuoverle con un setaccio.<\/li>\n<li><strong>Frullare i fagioli di soia ammollati e decorticati con una parte di acqua: <\/strong>a questo punto prepareremo il latte di soia crudo, per estrarre il massimo dei nutrienti dai fagioli di soia.<\/li>\n<li><strong>Filtrare il latte di soia: <\/strong>con un sacchetto filtrante, filtrare il latte per separarlo dalla crusca, chiamata OKARA. Con questa crusca si possono fare diverse cose come nuggets o crocchette di pollo vegane e persino biscotti, non sprecatela!<\/li>\n<li><strong>Bollire il latte di soia:<\/strong> ora \u00e8 il momento di far bollire il latte di soia filtrato per almeno 10-15 minuti per eliminare il sapore amaro e le tossine dei semi di soia crudi. \u00c8 obbligatorio farlo, poich\u00e9 la soia non pu\u00f2 essere consumata cruda. Pi\u00f9 a lungo lo cuocete, pi\u00f9 sar\u00e0 buono, ma tenetelo d&#8217;occhio per evitare che si attacchi al fondo.<\/li>\n<li><strong>Frullare gli anacardi e l&#8217;amido di mais con il resto dell&#8217;acqua: <\/strong>mentre il latte di soia bolle, frullare gli anacardi e l&#8217;amido di mais e aggiungere questo composto direttamente al latte di soia, mescolando costantemente in modo che non si formino grumi. Cuocere fino a quando il latte di soia diventa meno fluido e un po&#8217; pi\u00f9 denso e cremoso.<\/li>\n<li><strong>Temperare il composto coperto: <\/strong>una volta raggiunta una buona consistenza, toglierlo dal fuoco e lasciarlo raffreddare coperto in modo che non si formi una crema.
