In Ecuador, quello che chiamavamo &#8220;pan de pascua&#8221; era un panettone, in Cile invece quello che chiamavamo &#8220;pan de pascua&#8221; era pi\u00f9 un dolce natalizio scuro e denso con noci o frutta candita. \u00c8 abbastanza delizioso quando \u00e8 fresco, ma non ha la morbidezza di un <a href=\"https:\/\/it.wikipedia.org\/wiki\/Pandoro\" target=\"_blank\" rel=\"noopener\">pandoro<\/a> vegano, che \u00e8 ci\u00f2 che lo rende cos\u00ec popolare nel mondo.<\/p>\n<p>Come in Italia, questi dolci sono disponibili solo nel periodo natalizio, perch\u00e9 poi vengono tolti per sempre dalle vetrine dei supermercati fino all&#8217;anno successivo.<\/p>\n<p>Ma bene, io porto una soluzione. Attualmente non ho lo sbattitore elettrico ma se ne avete uno lo potete usare in questa ricetta e render\u00e0 questa preparazione molto pi\u00f9 semplice e con un risultato pi\u00f9 fluido e professionale.<\/p>\n<h2>Di quali ingredienti ho bisogno per fare un pandoro vegano?<\/h2>\n<p>Gli ingredienti per questo dolce pane natalizio non sono molto complessi da ottenere, anche se includer\u00f2 ingredienti che mi hanno dato un risultato perfetto che sono un po &#8216;pi\u00f9 strani, possono essere omessi dando comunque un buon risultato. Fornir\u00f2 sempre un&#8217;alternativa pi\u00f9 disponibile:<\/p>\n<ul>\n<li>Pazienza e dedizione<\/li>\n<li>Farina per pane<\/li>\n<li>Zucchero<\/li>\n<li>Lievito secco o fresco<\/li>\n<li>Sostituzione delle uova a base di Aquafaba<\/li>\n<li>Margarina vegetale in blocco o olio di cocco raffinato<\/li>\n<li>Semi di vaniglia, essenza o aroma di vaniglia<\/li>\n<li>Scorza di limone<\/li>\n<\/ul>\n<h3>Pazienza e dedizione<\/h3>\n<p>Questo ingrediente \u00e8 fondamentale per preparare il pandoro vegano, non c&#8217;\u00e8 modo di preparare tutto in un giorno, poich\u00e9 richiede lunghi periodi di tempo a causa del minor contenuto di lievito. Questo per rendere il pane pi\u00f9 digeribile ed evitare il gusto estremamente acido del lievito a fermentazione forzata.<\/p>\n<p>Il lievito trasforma gli zuccheri in alcool, se ne aggiungiamo troppo, prima di ottenere una forte maglia glutinica, il pane avr\u00e0 un aroma alcolico troppo forte che si stampa sul pane cotto e non \u00e8 quello che stiamo cercando. Vogliamo un pane equilibrato e digeribile.<\/p>\n<h3>Farina per pane<\/h3>\n<p>La farina per preparare il pandoro vegano richiede una maggiore percentuale di proteine. In Italia si utilizza farina fine (tipo 00) ma del tipo Manitoba, cio\u00e8 con maggiore forza, questo perch\u00e9 la farina macinata fine ne facilita l&#8217;impermeabilizzazione e raggiunge un grande volume, ma per essere mantenuta deve formare una stalla briciola, altrimenti potrebbe facilmente collassare. Puoi trovare la mia ricetta per rinforzare la tua farina semplice <a href=\"https:\/\/hazlovegan.com\/recetas\/como-hacer-harina-para-pan\/\">qui.<\/a><\/p>\n<p>Se la tua farina contiene il 12% o il 13% di proteine, \u00e8 sufficiente per questa ricetta. Praticamente qualsiasi zucchero semolato funzioner\u00e0, assicurati solo che sia vegano e non trattato con carbone di ossa di animali per lo sbiancamento.<\/p>\n<p>Puoi anche usare zucchero integrale non raffinato, o zucchero di cocco, perch\u00e9 no? Scurir\u00e0 un po &#8216;l&#8217;impasto, ma se hai questi ingredienti vegani, usarli \u00e8 la decisione migliore.<\/p>\n<h3>Lievito secco o fresco<\/h3>\n<p>Uso lievito disidratato in tutte le mie ricette, in quanto ha una shelf life molto pi\u00f9 lunga, \u00e8 pratico e pi\u00f9 maneggevole. Il rapporto tra lievito secco e lievito fresco in blocco \u00e8 1: 3, tre grammi di lievito tradizionale equivalgono a un grammo di lievito secco.<\/p>\n<p>Ecco perch\u00e9 le bustine da 10g equivalgono a un blocco da 30g di lievito tradizionale, che \u00e8 la razione per trasportare un chilo di farina.<\/p>\n<p>Per favore controlla che il tuo lievito non sia scaduto, \u00e8 condanna a morte per tutti i tipi di impasto. A volte il lievito secco perde forza dopo essere stato aperto per un po &#8216;. Non aumentare il loro importo per compensare, ottenere una nuova busta o blocco. Non vuoi sprecare il tuo prezioso lavoro.<\/p>\n<h3>Sostituzione delle uova a base di Aquafaba<\/h3>\n<p>Per sostituire l&#8217;uovo in questa ricetta useremo la nostra amata Aquafaba (<a href=\"https:\/\/hazlovegan.com\/recetas\/aquafaba-casera-de-garbanzos\/\">Vedi ricetta qui<\/a>) con amido di manioca, margarina morbida e qualche goccia di colorante alimentare giallo o curcuma se preferite i colori naturali, anche se lo evito perch\u00e9 fornisce un leggero sapore che non mi piace troppo.<\/p>\n<p>Uso anche un altro paio di ingredienti che ritengo aiutino a creare struttura nella ricetta che sono lecitina di soia granulare in polvere e gomma di xantano o CMC. Sono opzionali e nessuno impedir\u00e0 al pane di funzionare correttamente. Anche usare solo latte vegetale dar\u00e0 un buon risultato, se rispettate la corrispondente impastatura e riposo.<\/p>\n<h3>Blocco di margarina o olio di cocco raffinato (non aromatizzato)<\/h3>\n<p>Questo ingrediente \u00e8 ci\u00f2 che dar\u00e0 l&#8217;elemento grasso alla ricetta che aiuter\u00e0 a legare per renderla pi\u00f9 morbida e umida e dar\u00e0 una mollica pi\u00f9 chiusa che ricorda un pan di spagna, caratteristico del pane brioche.<\/p>\n<p>Il pandoro vegano contiene una grande quantit\u00e0 di grassi che viene incorporata in modo uniforme alla fine dell&#8217;impasto, prova ad usare la margarina morbida, tirala fuori dal frigorifero in anticipo ma non scioglierla o il tuo impasto diventer\u00e0 ingombrante durante la lavorazione.<\/p>\n<h3>Semi di vaniglia, essenza o aroma di vaniglia<\/h3>\n<p>Non sono troppo esigente con il sapore di vaniglia, se sei un fan dei buongustai e vuoi usare tutte le risorse fantasiose che hai a portata di mano, usa i semi del baccello di vaniglia del Madagascar. Se per te la vaniglia \u00e8 vaniglia, usa l&#8217;essenza che hai a portata di mano. Ho usato una chiara essenza di vaniglia concentrata che \u00e8 la pi\u00f9 comune qui.<\/p>\n<h3>Scorza di limone<\/h3>\n<p>Usa la scorza di limone fresca, con 1\/3 di limone grattugiato \u00e8 sufficiente per questo pane da 750 g. \u00c8 solo per dare un tocco agrumato, rimarrai sorpreso da tutto ci\u00f2 che \u00e8 evidente in questa ricetta. Non sono un grande fan del sapore di agrumi nel pane. Ma qui \u00e8 una questione di identit\u00e0. Il pandoro ha un sapore leggero e caratteristico. Non hai bisogno di nessun altro sapore aggiuntivo.<\/p>\n<hr \/>\n<h2>Metodo per preparare il pandoro vegano<\/h2>\n<p>La preparazione di questo pane dolce si sviluppa in 3 passaggi:<\/p>\n<ul>\n<li>Preparazione della Biga: Questa fase viene effettuata il giorno prima o 2 giorni prima quando si vuole avere il prodotto finito fresco. Quindi pianifica in anticipo. \u00c8 una piccola quantit\u00e0 di lievito naturale che aiuter\u00e0 a diminuire la quantit\u00e0 di lievito utilizzata nella ricetta e lo sviluppo di glutine nell&#8217;impasto. Deve riposare un minimo di 12 ore.<\/li>\n<li>Il primo impasto: \u00e8 il impasto in cui viene utilizzata la biga aggiungendo parte degli ingredienti finali. In questa fase non vengono aggiunti aromi, poich\u00e9 la scorza \u00e8 naturale, se trascorre molto tempo nell&#8217;impasto deve fermentare e dare un liquore dal sapore citrico che non \u00e8 caratteristico del pandoro vegano. L&#8217;impasto deve essere impastato fino a che liscio, a mano o a macchina. Deve riposare per almeno 3 ore.<\/li>\n<li>Il secondo impasto: In questo impasto vengono aggiunti tutti gli ingredienti finali e l&#8217;impasto finale viene fatto crescere nello stampo. Prova a impastare fino a quando il tuo panino \u00e8 il pi\u00f9 liscio e perfetto possibile prima di metterlo nello stampo. Bagnare le mani pu\u00f2 aiutare a formare la palla e lisciarla nella padella unta e infarinata.<\/li>\n<\/ul>\n<h3>Nota importante sulla ricetta<\/h3>\n<p>Per questa ricetta, come per tutte, consiglio vivamente di avere una bilancia da cucina digitale, non deve essere professionale, baster\u00e0 una economica, misurini e cucchiai.
