Il glutine \u00e8 la proteina del grano che d\u00e0 elasticit\u00e0 al pane e agli impasti lievitati. Se a casa avete solo farina 0 o farina di manitoba, vi consiglio di sostituirne il 10% con amido di mais per ottenere un risultato pi\u00f9 croccante.<\/p>\n<h3>Olio di cocco<\/h3>\n<p>\u00c8 l&#8217;elemento grasso che sostituisce il burro nella ricetta, si comporta allo stesso modo perch\u00e9 si solidifica quando si raffredda ma a differenza di questo contiene il 100% di grassi. Con la quantit\u00e0 inclusa nella ricetta, copriamo anche l&#8217;elemento grasso che verrebbe fornito dal tuorlo delle uova.<\/p>\n<h3>Zucchero<\/h3>\n<p>Quando ho assaggiato questi dolci, ho avuto la sensazione che fossero un impasto abbastanza dolce\u00a0 e mi \u00e8 piaciuto cos\u00ec. Se preferite rendere l&#8217;impasto pi\u00f9 neutro e aggiungere la dolcezza solo con lo zucchero a velo, diminuite la quantit\u00e0 di zucchero.Io lo sconsiglio, mi piacciono dolci e golosi \ud83d\ude42 In Europa lo zucchero bianco \u00e8 vegano, se trovate uno zucchero certificato vegano e biologico, tanto meglio.<\/p>\n<h3>Grappa<\/h3>\n<p>L&#8217;alcool di questa ricetta ha una funzione tecnica, evaporer\u00e0 con il calore e di conseguenza dar\u00e0 foglie pi\u00f9 croccanti. \u00c8 come un ausiliare dell&#8217;impasto mentre \u00e8 crudo, sar\u00e0 pi\u00f9 maneggevole e pi\u00f9 morbido e croccante quando sar\u00e0 cotto.<br \/>\nL&#8217;alcol durante l&#8217;evaporazione aiuta anche a formare bolle sulla superficie degli impasti, formando strati pi\u00f9 croccanti e fragili. \u00c8 possibile utilizzare aguardiente, vodka, pisco o qualsiasi o altro\u00a0distillato\u00a0e\u00a0liquore con 40\u00ba di alcool. C&#8217;\u00e8 chi aggiunge il vino, io l&#8217;ho provato personalmente e non mi \u00e8 piaciuto molto, il grado alcolico \u00e8 molto basso e non danno un risultato croccante come con la grappa.<\/p>\n<h3>Lievito in polvere<\/h3>\n<p>Lo scopo di questo ingrediente \u00e8 quello di creare bolle d&#8217;aria nell&#8217;impasto. \u00c8 possibile utilizzare il lievito in polvere alla vaniglia e la cremor tartaro in polvere. Come segreto, si pu\u00f2 anche usare un po&#8217; di idrolitina come polvere levitante, oppure 1\/4 di cucchiaino del classico bicarbonato di soda con un cucchiaino di aceto di mela.<\/p>\n<h3>Sostituto dell&#8217;uovo<\/h3>\n<p>Per la sostituzione dell&#8217;uovo nelle chiacchiere vegane, ci sono diverse alternative, ma attualmente uso l&#8217;aquafaba, che \u00e8 il liquido di cottura dei ceci, che contiene una certa quantit\u00e0 di proteina di ceci in sospensione che gli conferisce propriet\u00e0 leganti.<\/p>\n<p>Il latte o yogurt di soia \u00e8 l&#8217;opzione migliore, ma non \u00e8 un prodotto che uso troppo o che ho sempre a portata di mano mentre preparo il mio latte vegetale e ho altre preferenze come gli anacardi. Per questo motivo uso un po&#8217; di latte vegetale fatto in casa aggiungendo altre proteine di soia isolate con curcuma per fornire colore e gomma di xantano con amido di mais come addensante.<\/p>\n<h4>Perch\u00e9 utilizzare proteine isolate per il sostituto dell&#8217;uovo?<\/h4>\n<p>Una cosa che ho sempre avuto in cucina in questi giorni \u00e8\u00a0 le proteine isolate di soia. Lo uso per preparare sostituti dell&#8217;uovo, salsicce, formaggi vegetali e per fortificare il mio yogurt, latte e le frittate fatte in casa. Non \u00e8 un prodotto molto conosciuto, ma lo lascio sempre come opzione.<\/p>\n<p>Lo consiglio molto per aumentare il contenuto nutrizionale del cibo, perch\u00e9 quando sostituiamo un uovo l&#8217;ideale sarebbe quello di fornire anche il suo contenuto proteico, e in questo modo i preparati saranno pi\u00f9 fedeli alla versione originale, senza esserlo. \u00c8 un guadagno per il benessere animale e allo stesso tempo per la nostra salute.<\/p>\n<h3>Vanillina o Aromi di Vaniglia<\/h3>\n<p>Non sono molto selettiva quando si tratta di vaniglia, \u00e8 sempre meglio consumare quella nel baccello, ma \u00e8 molto costosa e scarsa. Cos\u00ec, in questa ricetta, ho optato per i sapori di vaniglia o per l&#8217;essenza. \u00c8 possibile utilizzare il lievito in polvere che contiene vanillina, ma aggiungendo un po&#8217; pi\u00f9 di vaniglia alla ricetta per rendere il sapore pi\u00f9 pronunciato.<\/p>\n<h3>Scorza di limone<\/h3>\n<p>Aggiungete scorza di limoni non trattati al gusto, io preferisco che siano pi\u00f9 alla vaniglia che al limone, ma sono entrambi gustosi.
