Come \u00e8 possibile? Che cosa fa? Da qui l&#8217;origine del suo nome: <strong>Aqua<\/strong> (acqua) <strong>Faba<\/strong> (fagioli) che si riferisce alla vasta gamma di <strong>legumi<\/strong> o fagioli.<\/p>\n<p>L&#8217;aquafaba di ceci \u00e8 di solito la variante pi\u00f9 comune, anche se \u00e8 possibile utilizzare altri legumi e la sua efficacia \u00e8 altrettanto comprovata, per ragioni di colore e chiarezza preferisco quella tradizionale a base di ceci. Quando si tratta di usare il liquido delle verdure in scatola, ho usato anche il liquido dei fagioli bianchi, o &#8220;cannellini&#8221; in Italia o &#8220;burro&#8221; nel chili, con un&#8217;altissima percentuale di successo.<\/p>\n<p>A causa di una confusione comune, voglio chiarire che non si tratta dell&#8217;acqua di ammollo dei fagioli, ma di quella ottenuta dopo la cottura. Con l&#8217;acqua di ammollo potete sempre innaffiare le piante, se siete ossessionati come noi dal non sprecare acqua.<\/p>\n<p>Questo liquido viscoso pu\u00f2 essere utilizzato cos\u00ec com&#8217;\u00e8, oppure ridotto facendolo bollire a media temperatura per addensarlo un po&#8217; e poi raffreddandolo in frigorifero per qualche ora. Trovo che funzioni molto meglio a freddo che a temperatura ambiente, ma ognuno trarr\u00e0 le proprie conclusioni.<\/p>\n<p>Capisco che ci sia molta impazienza nel vedere se funziona, ma perch\u00e9 funzioni dall&#8217;inizio alla fine, tutti i passaggi devono essere seguiti molto attentamente e accuratamente.<\/p>\n<p>Infine, cos&#8217;\u00e8 l&#8217;aquafaba? E cosa fa? Si tratta di un liquido leggermente denso e giallastro, dalla consistenza simile a quella dell&#8217;albume d&#8217;uovo, che presenta una certa quantit\u00e0 di proteine rilasciate dalla cottura e dall&#8217;ammollo dei ceci, sufficienti a intrappolare l&#8217;aria quando vengono montate energicamente e a creare la schiuma stabile che chiamiamo <strong>meringa<\/strong>.<\/p>\n<p>Incredibile, vero? Probabilmente si tratta della stessa schiuma che diventa bianca durante la cottura e che galleggia in superficie e che dobbiamo rimuovere per evitare che la pentola trabocchi e la cucina diventi un pasticcio (non preoccupatevi che rimuovendola non togliete l&#8217;efficacia dell&#8217;aquafaba).<\/p>\n<h2>L&#8217;aquafaba di ceci sostituisce l&#8217;uovo?<\/h2>\n<p>La risposta \u00e8 s\u00ec e&#8230; no. Un uovo \u00e8 composto da albume e tuorlo. Il bianco \u00e8 un liquido chiaro e viscoso con un buon contenuto di proteine e un contenuto di grassi quasi nullo, in qualche modo paragonabile all&#8217;aquafaba di ceci.<\/p>\n<p>Il tuorlo, invece, contiene poche proteine, lipidi, carboidrati e lecitine, che non sono presenti nel nostro succo miracoloso, ma sono ugualmente sostituibili con altri ingredienti.<\/p>\n<p>In breve, l&#8217;aquafaba di ceci pu\u00f2 sostituire l&#8217;albume d&#8217;uovo, dove viene utilizzata per il suo potere di essere un agente montante e idratante con un piccolo contenuto proteico che conferisce una piccola quantit\u00e0 di elasticit\u00e0.<br \/>\nAd esempio:<\/p>\n<ul>\n<li>Biscotti vegani, biscotti, sospiri e pan di Spagna<\/li>\n<li>Meringhe vegane<\/li>\n<li>Macarons vegani (s\u00ec, quello che avete letto)<\/li>\n<li>Pavlova vegana<\/li>\n<li>Pane arricchito (brioche, mollica, pane dolce, conchiglie, panini alla cannella) vegano<\/li>\n<li>Maionese vegana o vegana<\/li>\n<li>Condimenti senza uova<\/li>\n<li>Marshmallow senza uova n\u00e9 gelatina<\/li>\n<li>Torrone vegano<\/li>\n<li>Glassa reale vegana<\/li>\n<li>Pastella per torta vegana o crema di burro meringata vegana<\/li>\n<\/ul>\n<p>Ricette in cui l&#8217;aquafaba di ceci da sola non sostituisce gli albumi, perch\u00e9 non ha le propriet\u00e0 addensanti e coagulanti per mantenere la struttura di un pan di Spagna extra light e dal punto di vista nutrizionale non ha un contenuto proteico sufficiente per essere utilizzata come ingrediente nutrizionale:<\/p>\n<ul>\n<li>Pan di Spagna (genoise vegana)<\/li>\n<li>Biscotti proteici ad alto contenuto di albume d&#8217;uovo.<\/li>\n<li>Frullati di proteine<\/li>\n<\/ul>\n<p>Guardate questo breve video su come assemblare l&#8217;aquafaba alla meringa in soli 5 minuti:<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube-nocookie.com\/embed\/07sT3K8a3wk\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h2>L&#8217;aquafaba lascia un sapore di ceci nelle preparazioni?<\/h2>\n<p>Risposta breve: no. Nella meringa, cos\u00ec come nei biscotti, la proporzione di aquafaba di ceci \u00e8 irrisoria rispetto alla quantit\u00e0 di zucchero e di altri ingredienti, proprio come nella mayo, il rapporto aquafaba\/olio. Non sentirete nulla, ma se siete scettici, potete sempre camuffare un po&#8217; di essenza di vaniglia in preparazioni dolci. Cercate quello trasparente, non rovinate il colore bianco perfetto della vostra meringa \ud83d\ude09<\/p>\n<h2>Come si ottiene l&#8217;Aquafaba di ceci?<\/h2>\n<p>Il modo pi\u00f9 rapido per ottenere l <strong>&#8216;aquafaba di ceci<\/strong>\u00a0\u00e8 direttamente da una lattina di ceci o di fagioli bianchi. Perch\u00e9 funziona? I ceci vengono cotti a vapore a bassa temperatura per molto tempo e poi vengono immersi nel loro stesso liquido di cottura all&#8217;interno della lattina, rilasciando ancora pi\u00f9 proteine in questo liquido. Alcune persone non sono d&#8217;accordo con il loro utilizzo, perch\u00e9 diffidano dell&#8217;uso di additivi dannosi per la conservazione, ma poi faccio un paragone con quanto pu\u00f2 essere dannosa l&#8217;industria delle uova e la cosa passa in secondo piano.<\/p>\n<p>A dire il vero, il liquido del barattolo \u00e8 un successo garantito per la maggior parte degli usi: maionese, meringa e torte. Ma comprare continuamente barattoli per questo uso non mi sembra un&#8217;opzione sostenibile, in alcuni paesi non \u00e8 nemmeno comune; in Cile, ad esempio, ricordo a malapena qualche legume in formato tetrapak, ma cucinare con legumi secchi era pi\u00f9 comune.<\/p>\n<p>Personalmente preferisco prepararlo a casa, dove mi assicuro di utilizzare ingredienti che posso pronunciare, ma \u00e8 una decisione molto personale, non tutti hanno il tempo e la pazienza che ho io in questa fase della mia vita.<\/p>\n<p>E poi c&#8217;\u00e8 l&#8217;altra parte interessata, l&#8217;<strong>ambiente<\/strong>. Perch\u00e9 s\u00ec, purtroppo ci sono paesi in cui il riciclaggio \u00e8 ancora inesistente, una lattina finisce nello stesso posto di un tetrapak, di plastica o di vetro, il che mi fa rabbrividire ogni volta che apro e butto una lattina. In una dieta vegana, il consumo di legumi \u00e8 fondamentale: con le scatole che dovrei aprire a settimana per sfamarci, potrei costruire un castello in 2 mesi.<\/p>\n<p>In Italia l&#8217;alluminio viene riciclato ma a noi piace l&#8217;idea di ridurre piuttosto che riciclare e poi, con questa crisi pandemica, uscire al supermercato \u00e8 un lusso che non ci si pu\u00f2 permettere molto
